Fortunately, kimchi has grown immensely in popularity, making it readily available in most major supermarket chains. You’ll typically find it in the refrigerated produce section, often near the tofu or other fermented foods. However, for an authentic and wider selection, I highly recommend visiting an Asian market if you have one nearby. These specialty stores often carry a diverse range of brands and styles. My personal go-to is Tobagi brand “Sliced Cabbage Kimchi,” which consistently delivers excellent flavor and texture.

For those who prefer the convenience of online shopping, HMart is a fantastic resource. They frequently stock Tobagi kimchi at competitive prices, sometimes even cheaper than what I find locally. Of course, the most rewarding option is to make your own homemade kimchi. It’s a satisfying project that allows you to customize the flavors to your liking. But don’t fret if you’re using a supermarket brand; even a standard store-bought kimchi will yield a delicious and satisfying Kimchi Fried Rice.

Tips for Masterful Kimchi Fried Rice

Creating the perfect Kimchi Fried Rice involves a few key techniques. The foundation of any great fried rice is, undoubtedly, the rice itself. Always use day-old, refrigerated cooked rice. This allows the rice grains to dry out and separate, preventing your fried rice from becoming mushy and clumpy. Freshly cooked, hot rice contains too much moisture, which can ruin the texture. When preparing the ingredients, ensure everything is chopped and ready to go before you start cooking, as fried rice comes together very quickly.

Consider the ripeness of your kimchi. More fermented, sour kimchi will lend a deeper, more pungent flavor to the dish, which is often preferred for fried rice. If your kimchi is on the milder side, you might want to add a touch more kimchi juice or even a dash of gochujang (Korean chili paste) for an extra layer of heat and umami. Don’t be afraid to experiment with additional proteins like diced pork belly, Spam (a classic Korean addition), chicken, or tofu to make it a more substantial meal.

Finally, the presentation matters. A perfectly fried egg, especially with a runny yolk, makes an excellent topping, enriching the dish with its creamy texture. A sprinkle of toasted sesame seeds, a drizzle of sesame oil, and freshly sliced green onions add visual appeal and an extra burst of flavor. For an added layer of umami and crunch, consider crumbling some roasted seaweed (gim) over your finished fried rice.

Kimchi Fried Rice Recipe

JADEN’S NOTES: Fried rice is best made with leftover rice that’s been refrigerated. The rice is dried out a bit and separated, which makes it perfect for stir-frying. Using freshly cooked, hot rice will make your fried rice mushy. This recipe has been slightly revised from Julie’s original to ensure perfect results.

Ingredients

  • 3 cups day-old, cooked white rice
  • 1 tablespoon vegetable oil, divided
  • 2 large eggs
  • 1 small onion, diced (about 1/2 cup)
  • 1 stalk green onion, minced
  • 1 clove garlic, finely minced
  • 1/2 cup prepared kimchi, roughly chopped + 1 tablespoon kimchi juice
  • 1 cup frozen vegetables (peas, carrots, corn, or others), thawed
  • 2 teaspoons soy sauce
  • Freshly ground black pepper, to taste

Instructions

  1. Break up the day-old rice with a fork or with wet hands to ensure no clumps remain, then set aside.
  2. In a wok or large saute pan, heat 1/2 tablespoon of vegetable oil over medium-high heat. Once the oil is hot, crack in the eggs and scramble them until cooked through. Remove the scrambled eggs from the skillet and set aside in a bowl.
  3. Add the remaining 1/2 tablespoon of vegetable oil to the same pan. Once shimmering, add the diced onion, minced green onion, finely minced garlic, and the chopped kimchi. Stir-fry constantly until the onion becomes translucent and tender, which should take approximately 3 minutes.
  4. Increase the heat to high. Add the prepared rice and the thawed frozen vegetables to the pan. Using your spatula, thoroughly mix the rice with the onion and kimchi mixture. Spread the rice evenly across the entire surface of the wok or pan. Allow it to cook undisturbed for about 30 seconds to develop a slight crispness. Give the fried rice a good stir and flip, then spread it out over the surface of the pan again and let it cook undisturbed for another 30 seconds. Repeat this process until the rice is heated through and steaming, usually about 3-5 minutes total.
  5. Drizzle in the reserved kimchi juice and the soy sauce. Add the scrambled eggs back into the pan. Stir and mix all the ingredients well to combine. Taste and season with additional soy sauce or more kimchi if desired, and finish with a sprinkle of freshly ground black pepper. Serve immediately.
