It’s a taste of history and heartwarming sustenance, perfect for any time of day. This recipe yields four generous servings, making it ideal for a family meal or a small gathering with friends.

A note on preparing leeks: For this recipe, you’ll utilize all of the white and light green parts of the leek. To clean thoroughly, first cut the leek in half just where the dark green leaves begin. Then, slice the white stalk lengthwise and rinse it well. For the green leaves, peel them apart and wash them meticulously under cool running water, or even submerge them in a sink full of water as you peel. Leeks are notorious for hiding dirt and sand between their layers, so a thorough wash is crucial for a grit-free dish.

Instructions

  1. Cook the grits according to package directions. Stone-ground grits often require longer cooking times and more liquid than instant varieties, so follow the specific instructions on your package for the best results. Once the bacon is almost done, push the pieces to one side of the pan.
