Chef’s Notes: Cornflake crumbs are often found next to other bread crumbs in most grocery stores. If you only have regular cornflake cereal, simply place them in a bag and smash them until they become fine crumbs. The iconic Marcella Hazan tomato sauce requires just three ingredients: crushed tomatoes, half an onion, and butter. No need to chop the onion further; it’s placed whole into the sauce and removed after cooking, having transferred all its wonderful flavors. For the meatballs, we recommend using Mori-Nu silken tofu for its consistent quality, but any brand of silken tofu will work perfectly. For a dairy-free version, consider using a good quality soy cheese or your preferred dairy-free parmesan alternative.

- 2 14-ounce cans crushed tomatoes
- 1/2 large yellow onion, peeled
- 3 tablespoons unsalted butter
- 1 pound spaghetti, or your preferred pasta, cooked according to package directions
For the Meatballs:
- 1 pound lean ground turkey or ground chicken
- 6 ounces soft or silken tofu (Mori-nu brand recommended for best results)
- 1/2 medium onion, grated on the large holes of a box grater
- 2 cloves garlic, very finely minced or grated
- 2 tablespoons fresh basil, minced
- 1/2 cup corn flake, bread, or panko crumbs
- 1 teaspoon kosher or sea salt (use 1/2 teaspoon if using regular table salt)
- Freshly ground black pepper, to taste
- Freshly grated Parmesan cheese, for serving (optional)
Instructions
- To prepare the sauce: In a large sauté pan or soup pot, combine the crushed tomatoes, the half onion (peeled but whole), and the butter. Cover the pot and bring the mixture to a gentle simmer over medium heat.
- In the meantime, prepare the meatballs: In a large mixing bowl, thoroughly combine all of the meatball ingredients (ground turkey/chicken, silken tofu, grated onion, minced garlic, fresh basil, crumbs, salt, and pepper). Use a melon baller or your hands to gently form the mixture into uniform meatballs. Avoid overworking the meat to ensure tenderness.
- Once the tomato sauce reaches a simmer, reduce the heat to low. Carefully add the formed meatballs directly into the simmering sauce. Cover the pot again and allow the meatballs to cook gently for approximately 20 minutes, or until they are cooked through and tender. Before serving, taste the sauce and adjust seasoning with additional salt and pepper if needed. Carefully discard the half-onion from the sauce. Serve the flavorful sauce and tender meatballs immediately over your cooked spaghetti or pasta, garnished with a sprinkle of freshly grated Parmesan cheese, if desired.
