For this salad, I was able to pick the vibrant baby arugula leaves from my small urban garden just minutes before photographing the dish. It’s a truly satisfying experience! My modest 4′ x 2′ raised bed has been an incredible source, consistently providing us with a fresh supply of peppery baby arugula for the past two months now. The beauty of arugula is its resilience; I simply cut the outer leaves at the base of the stems, and within a week, the plants miraculously grow new, tender leaves, ready for another harvest. This continuous cycle ensures a constant stream of fresh greens, brimming with flavor and nutrients, throughout the growing season.

The experience of eating directly from the garden is a pure, unadulterated joy – a profound connection to nature and a celebration of simple, wholesome food that tastes infinitely better than anything from a store. Knowing Jaden’s enthusiasm for all things culinary and her budding “urban farm” aspirations, I can hardly contain my excitement to see what magnificent bounty she will cultivate and, more importantly, what incredible dishes she will create with her homegrown treasures! Heirloom Tomato and Avocado Salad with Crispy Wontons and Spicy Cilantro Vinaigrette

Ingredients

For the Crispy Wontons:

  • 2 tablespoons olive oil
  • 12 square wonton wrappers
  • Sea salt to taste

For the Spicy Cilantro Vinaigrette:

  • 1 ounce cilantro leaves (about 1 cup, tightly packed)
  • 1 tablespoon pine nuts
  • 1 clove garlic, skinned
  • 2 tablespoons brown rice vinegar
  • 1/2 teaspoon maple syrup or organic sugar
  • 5 tablespoons extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon ground cayenne pepper

For the Salad Assembly:

  • 2 ripe avocados, cut into 1-inch pieces
  • 1 1/4 pounds mixed heirloom tomatoes, cut into 1-inch pieces
  • 5 ounces baby arugula, rinsed and spun dry
  • Freshly ground white pepper, to taste

Instructions

  1. To prepare the crispy wontons: Cut the wontons into 1/4-inch strips. Heat a large frying pan over medium-high heat. Add the olive oil and wonton strips. Toss well and sauté for 2 to 3 minutes until they turn golden-brown and crispy, tossing occasionally to ensure even cooking. Transfer the cooked wontons to a paper towel-lined plate and sprinkle immediately with sea salt.
  2. To make the vinaigrette: Combine all vinaigrette ingredients (cilantro leaves, pine nuts, skinned garlic clove, brown rice vinegar, maple syrup or organic sugar, extra virgin olive oil, sea salt, and ground cayenne) in the bowl of a food processor. Process until the mixture is creamy and well combined, approximately 1 minute. Stop once or twice to scrape down the sides of the bowl to ensure everything is incorporated. Transfer the finished vinaigrette to a small bowl.
  3. To assemble the salad: Divide the rinsed and dried baby arugula evenly among 4 individual salad bowls or plates. Artfully arrange the cut avocado pieces and heirloom tomato pieces on top of the arugula. Drizzle a generous amount of the spicy cilantro vinaigrette over the entire salad. Finally, garnish with the freshly prepared crispy wontons. Finish with a sprinkle of freshly ground white pepper to taste, and serve immediately to enjoy its vibrant flavors and textures.
