Ingredients

  

  • 4 pound whole chicken
  • 1/4 cup sweet plum sauce
  • 1 head of garlic, halved
  • 1 lemon, quartered
  • salt & pepper
  • 3 tablespoons butter, softened
  • kitchen twine
  • 1/4 cup sweet plum sauce to serve at table

Instructions

 

  • Rinse the chicken thoroughly under cold water, then carefully cut away any excess fat. This ensures a cleaner roast and helps the skin crisp evenly. Pat the chicken completely dry with paper towels, both inside and out – this crucial step promotes crispy skin. Place the prepared chicken in a shallow baking dish and generously rub softened butter all over its surface, gently tucking a small amount under the breast skin for added moisture and flavor.
  • Season the chicken generously with salt and freshly ground black pepper, ensuring both the exterior and the internal cavity are well-seasoned. Don’t be shy with the seasoning; it forms the foundation of the flavor.
  • Stuff the chicken’s cavity with the halved head of garlic and the quartered lemon. These aromatics will infuse the meat with subtle, delicious flavors from the inside out. Using kitchen twine, tie the chicken’s legs together to help it cook more evenly and maintain its shape. Finally, slather the entire chicken with 1/4 cup of sweet plum sauce, ensuring an even coating for a beautiful glaze.
  • Place the chicken breast-side down in your baking dish and let it rest at room temperature for 30 minutes. This helps ensure even cooking. Meanwhile, preheat your oven to 450°F (230°C). Roast the chicken for 20 minutes at this high temperature to achieve a golden-brown skin. After 20 minutes, carefully turn the chicken breast-side up, reduce the oven temperature to 375°F (190°C), and return it to the oven. Continue to roast for another 60-70 minutes, brushing with additional sweet plum sauce during the last 15-20 minutes of cooking. Keep an eye on the skin; if it starts to brown too quickly or approach maximum crispiness (i.e., burning), loosely tent the chicken with aluminum foil.
  • The chicken is fully cooked when the juices run clear when a knife tip is inserted into the thickest part of the thigh (without touching bone). An instant-read thermometer should register 170°F (77°C) in this area. Once done, remove the chicken from the oven and let it rest for 10 minutes before carving. Resting allows the juices to redistribute, resulting in a more tender and flavorful chicken. Serve with an extra side of sweet plum sauce for dipping.

    Note: During roasting, if the chicken skin starts to burn, cover the affected areas with small bits of foil secured with toothpicks, using the “foil hat” technique as illustrated in the photo above.
