Thai Fish Soup Recipe
To transform this healthy soup into a complete and satisfying light meal, we highly recommend adding approximately 1/2 pound of dried rice noodles. Simply prepare the rice noodles according to the package directions, then stir them into the soup just before serving.
Achieving the perfect flavor balance is key; you’ll season this soup to taste with fish sauce and fresh lime juice. Feel free to adjust the quantities, adding more if you desire a more intense and vibrant flavor profile.
Should you find it challenging to source fresh lemongrass or kaffir lime leaves, don’t worry! You can easily substitute them with the aromatic peel of a lemon or lime. Use a vegetable peeler to obtain thin strips of zest, making sure to avoid the bitter white pith. Give each strip a good bruising or twist to release its essential oils and infuse the broth with a similar citrusy brightness.

- 1 tablespoon cooking oil
- 1 clove garlic, finely minced
- 1 teaspoon grated fresh ginger
- 1/4 red onion, very thinly sliced
- 1/2 red chili pepper, sliced (optional, for a spicy kick)
- 1 stalk lemongrass, bottom stalk only, bruised (substitute with peel of 1/2 lemon or lime for similar aroma)
- 4 kaffir lime leaves, torn (substitute with peel of 1/2 lemon or lime)
- 14 ounces can full-fat coconut milk
- 1 cup vegetable broth (or chicken broth for richer flavor)
- juice of 1/2 fresh lime (to taste)
- 1 tablespoon fish sauce (for authentic umami)
- 6 ounces fresh or frozen shrimp, peeled and deveined
- 8 ounces salmon, fresh or frozen, cut into 1-inch chunks
- assorted fresh vegetables, such as bok choy, spinach, snow peas, kale, tomatoes (wedges), bell pepper (sliced), or mushrooms
- 1 tablespoon fresh minced cilantro, for garnish
Instructions
- Begin by preparing your aromatics. In a large wok or a sturdy soup pot, heat the cooking oil over medium-high heat. Swirl the oil to ensure an even coating across the bottom of the pan. Once the oil is hot and shimmering, add the minced garlic, grated fresh ginger, thinly sliced red onion, optional red chili pepper, bruised lemongrass, and torn kaffir lime leaves (or your lemon/lime peel substitute). Gently sauté these ingredients for about 2 minutes, stirring occasionally, allowing their fragrant aromas and delightful flavors to fully release into the oil. This step is crucial for building the rich base of your soup.
- Next, carefully pour in the full-fat coconut milk and vegetable broth (or chicken broth) into the pot. Bring the mixture to a gentle simmer, then reduce the heat slightly and allow it to simmer for approximately 15 minutes. This simmering time allows the flavors from the aromatics to deeply meld into the broth, creating a complex and authentic taste. After simmering, use tongs or a slotted spoon to remove and discard the lemongrass stalk, kaffir lime leaves (or citrus peels). Finally, season the aromatic broth with fish sauce and fresh lime juice. Taste and adjust as needed, adding more if you prefer a more pronounced tangy or savory note.
- To complete your nourishing soup, add the peeled and deveined shrimp, the 1-inch chunks of salmon, and your chosen assortment of fresh vegetables, along with the minced cilantro. Cook these ingredients for an additional 3-4 minutes, or until the shrimp turns opaque and pink, and the salmon flakes easily, indicating it’s perfectly cooked through. The vegetables should be tender-crisp. Serve immediately and enjoy the warmth and exquisite flavors of this healing Thai Fish Soup!
