Burrata Ravioli with Orange and Sage Recipe

This exquisite Burrata Ravioli recipe features delicate burrata cheese, meticulously portioned and seasoned with fresh garlic, fragrant parsley, aromatic sage, and freshly ground black pepper. The ravioli are expertly formed using convenient wonton wrappers (or homemade pasta dough for the traditionalist). After a brief poaching, these tender parcels are tossed in a rich browned butter sauce, infused with the bright zest of orange, additional sage, and grated Parmesan. Each serving is elegantly presented on a bed of fresh, tender baby spinach, offering a harmonious blend of textures and flavors.

For the Browned Butter Orange Sauce:

  • 7 tablespoons (100 g) unsalted butter
  • 3/4 ounce (20 g) nugget Parmigiano Reggiano
  • 1/4 orange wedge
  • Sea salt

For the Ravioli:

  • 1 large clove garlic, finely chopped
  • 3 sprigs Italian parsley, finely chopped
  • 2 fresh sage, finely chopped
  • 1/2 pound (200 g) burrata
  • Freshly ground black pepper
  • 1 egg yolk
  • 1 tablespoon water
  • 20 wonton wrappers or fresh pasta (see basic recipe)
  • 3 ounces (100 g) baby spinach, stems removed
  • 2 teaspoons (10 ml) extra-virgin olive oil
  • Sea salt
  • Browned butter sauce (from above)
  • 3/4 ounce (20 g) fresh Parmigiano Reggiano

Instructions

 

FOR THE BROWNED BUTTER ORANGE SAUCE:

  • In a small saucepan, combine the butter with the Parmigiano Reggiano and the orange wedge. Season with a generous pinch of sea salt. Cook over low heat, allowing the butter to gently brown and the flavors to meld, for approximately 8 to 10 minutes. The butter should achieve a rich, nutty aroma and a golden-brown hue. Carefully strain the browned butter mixture through a fine-mesh strainer into a small, heatproof dish and set aside to cool. This will separate the solids and leave you with a clear, flavorful sauce.

FOR THE RAVIOLI:

  • Prepare your workspace by covering a sheet pan or cookie sheet with parchment paper; this will prevent the ravioli from sticking. In a small bowl, finely chop and combine the fresh garlic, Italian parsley, and sage, creating an aromatic herb mixture. On a clean plate, divide the burrata into 20 small, uniform mounds, each about the size of a small nut. Season each burrata mound generously with a pinch of your prepared garlic and herb mixture, along with a dash of freshly ground black pepper. In a separate small dish, whisk the egg yolk with one tablespoon of water to create an egg wash, which will serve as your sealant.
  • Lay a single wonton wrapper flat on a clean work surface. If you prefer, you can use homemade fresh pasta cut into small circles or squares. Ensure that the remaining wrappers are kept covered to prevent them from drying out, which can make them difficult to work with. Using a small pastry brush, lightly brush the egg yolk mixture over the four corners and edges of the wonton dough. Carefully place one of the seasoned burrata mounds in the very center of the dough. Gently fold the dough over the cheese, or place another wrapper on top if making two-piece ravioli, and delicately press around the burrata to release any trapped air. This crucial step prevents the ravioli from bursting during cooking. Apply firm but gentle pressure with your forefinger and thumb to thoroughly seal the seams. For a refined finish, trim the edges with a chef’s knife or a fluted pasta cutter. Carefully transfer the completed ravioli to your parchment-lined sheet pan and repeat the process with the remaining wrappers and burrata filling.
  • Bring a large pot of generously salted water to a rolling boil. While the water heats, preheat your serving plates in a 200°F (100°C) oven to keep the finished dish warm. In a small bowl, gently toss the baby spinach (with stems removed) with the extra-virgin olive oil and a pinch of sea salt, then arrange it artfully on your warmed serving plates as a vibrant base. Carefully add the prepared ravioli to the boiling water. Cook for approximately 3 minutes, or until they gracefully float back up to the surface, indicating they are perfectly al dente. Using a spider, skimmer, or pasta strainer, carefully lift the cooked ravioli out of the water, ensuring they are well-drained. Arrange the tender ravioli over the seasoned spinach, drizzle generously with the reserved browned butter sauce, and finish with a fresh grating of Parmigiano Reggiano on top.
