On a more personal note, I recall a vivid memory from my childhood, probably around ten years old, when my Uncle Billy announced he was vacationing in Belize. That piece of news struck me as incredibly exotic and wonderfully glamorous. “When I grow up,” I thought, “one day I’m going to be glamorous and vacation in Belize too!” It became a little dream, a far-off aspiration. Well, I haven’t made it to the shores of Belize just yet, but perhaps one day I will. The closest I’ve gotten so far is Cancun, Mexico. While geographically close, the mere five-hour drive between them seems like a world of difference in my mind – Belize, with its pristine jungles, ancient ruins, and vibrant coral reefs, feels like an untouched paradise compared to the more developed tourist hubs. Beef Satay Skewers with Habanero Peanut Sauce Recipe

FOR THE BEEF SATAY:
- 1/2 cup onion, finely diced
- 3 cloves garlic, through garlic press
- 1 tablespoon grated fresh ginger
- 1 teaspoon sugar
- 2 teaspoons Asian red chili sauce (like sambal oelek or sriracha)
- 1 tablespoon minced fresh cilantro
- 1/4 cup soy sauce
- 2 teaspoons sesame oil
- 1/2 lime, juiced
- 1 1/2 pounds skirt steak, sliced into 1/2-inch thick strips
- Bamboo skewers, soaked in water for at least 30 minutes (to prevent burning)
FOR THE HABANERO PEANUT SAUCE:
- 1 cup smooth peanut butter
- 1/2 cup hot water (plus more if needed)
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp cumin
- 1/4 tsp habanero pepper, finely minced, to taste (use gloves and adjust for heat preference)
- 1/2 tsp curry powder
- 1 lime, juiced
Instructions
FOR THE BEEF SATAY:
- For the marinade, combine the finely diced onion, garlic, grated ginger, and sugar. You can mash these together using a mortar and pestle for a traditional paste, or use a food processor for a quicker, smoother blend. If your ingredients are already very finely chopped, further mashing may not be necessary. Transfer this aromatic mixture into a resealable bag. To the same bag, add the Asian red chili paste (sambal oelek or sriracha works great), fresh minced cilantro, soy sauce, sesame oil, and fresh lime juice. Seal the bag and massage it thoroughly to ensure all ingredients are well mixed. Finally, add the sliced skirt steak strips to the marinade, making sure each piece is coated. Marinate the beef for a minimum of 1-2 hours for flavor to penetrate, or for even deeper flavor and tenderness, marinate it overnight in the refrigerator. While the beef is marinating, prepare your Habanero Peanut Sauce.
- When you’re ready to cook, preheat your grill to high, direct heat. While the grill heats, thread the marinated beef strips onto your pre-soaked bamboo skewers. Be careful not to overcrowd the skewers, allowing for even cooking.
- Place the beef skewers on the hot grill. Grill for 3-4 minutes on each side. Crucially, continuously baste the skewers with the remaining marinade throughout the grilling process. This not only adds layers of flavor but also helps keep the beef moist and tender. Cook until the beef reaches your desired doneness (medium-rare to medium is recommended for skirt steak). FOR THE HABANERO PEANUT SAUCE:

Whisk until the sauce is completely smooth and creamy. If you find the sauce to be too thick for dipping, simply whisk in an additional tablespoon of hot water at a time until it reaches your preferred consistency.
