I highly recommend giving Better Than Bouillon bases a try; they offer robust, concentrated flavors without any added MSG. You can use any flavor you prefer to complement your dish, though chicken is my personal favorite for its versatility and ability to enhance many vegetable profiles. Alternatively, you can use 2 tablespoons of homemade or store-bought chicken or vegetable stock; however, if opting for liquid stock, you will likely need to adjust the seasoning with additional salt after cooking, as it generally has less sodium than bouillon. The primary advantage of using bouillon in this microwave method is that it provides intense, savory flavor without adding significant extra liquid, which is ideal for steaming vegetables effectively and preventing them from becoming waterlogged.

  • Cook Noodles and Vegetables: In a small saucepan, bring 2 1/2 cups of water to a rolling boil. Carefully add the dried ramen noodles to the vigorously boiling water and cook for 2 minutes. Subsequently, add the halved baby bok choy and baby corn to the saucepan. Continue to cook for an additional 2 minutes, or until the vegetables are tender-crisp and the noodles are perfectly al dente with a satisfying chew.

While all Nissin RAOH flavors—Soy Sauce, Tonkotsu, and Miso—can work beautifully in this recipe, I find that the Soy Sauce or Tonkotsu varieties pair exceptionally well with the Chinese flavors we’re aiming for! Feel free to experiment with your favorite to discover your perfect combination. For a richer, more intensely umami broth, consider using slightly less water than the package typically recommends for a slightly more concentrated soup base before adding your customization ingredients.
